Oolong tea from the Fujian province of China infused with the delicate scent of the night-blooming jasmine flowers. Our 'Jasmine Suite no. 12' is an exotic Dragon Phoenix Pearl tea, comprised of intricate jasmine-infused pearls. Each pearl combines two delicate leaves and an unopened bud. When added to water, the pearls majestically unfurl, releasing their delicate scent and flavor. A spellbinding treat for all senses. While not cheap, this tea is well worth the experience.

Story

Though sometimes referred to as green, jasmine teas are technically oolongs. They are prepared by mixing the delicate flowers of the night-blooming jasmine with tea each evening. With nightfall, the blossoms open and infuse the tea with their sweet aroma. Each morning, the spent flowers are removed and fresh blossoms readied for the evening. This process is repeated a number of times, depending on the grade of tea. For top jasmine grades, the nightly infusion continue for twelve consecutive nights.

"Reminds me of my favourite Chinese/Thai restaurant teas, only better. Slight hint of floral (jasmine), smooth, light. Advice: Use a tetsubin to brew this, it comes out perfect every time if you do and is hard to control the bitterness otherwise. Mine: 1/2 TBS per 8oz. Heat water to just under boiling. Rinse tetsubin with hot water, dump, then add the infuser with tea in it, and dump your water over it. Immediately cover and set timer for 4 minutes. Remove promptly and serve. Hint: Do not leave tea sitting in tetsubin too long, these can rust even when treated. They do, however, hold heat for a while which means warm tea for your next cup!"
