Story
Japan produces almost exclusively green tea, with three-quarters of its production classified as Sencha. Another fifteen percent is Bancha, a lower grade of tea made from late summer leaves. The finer varieties of Gyokuro and Matcha make up the rest. Most end in "cha," the Japanese word for tea. You may sometimes see an honorific prefix of "o" added, rendering it "o-cha." The finest types of Sencha tea also have names derived from the shape of the leaves. These are called Spider-Leg or Needle-Leaf teas.
