The world of berries is complicated. Technically speaking, to be a berry, a fruit must be produced from the ovary of a single flower, with the ovary wall developing into an edible portion called the "pericarp" (think of the flesh of a peach around the pit). Raspberries, by this definition then, are not berries, but aggregate fruit, formed from several fused ovaries. Chefs disagree with this definition, including raspberries in the berry camp alongside other aggregates like strawberries, blackberries, and mulberries. One thing they can both agree on though? “ Hello David! Oolongs are best for multiple steeps. For herbals, the 1st will likely offer the most flavor. To compensate for this, try a higher water temp + longer infusions when re-steeping. For health and safety, have all re-steeps within a few hours. ”
