Green Rooibos (Aspalathus linearis) is harvested from the same South African plant as traditional red rooibos but processed differently. Where red rooibos leaves are bruised and oxidised (a fermentation process that turns them deep reddish-brown) green rooibos leaves are specially treated to prevent oxidation, leaving them closer to their natural state with their chlorophyll intact. The result is lighter in colour, lighter in body, and lighter in character than red rooibos.
The resulting brew is lighter-bodied and less citric-piney than red rooibos, delivering a woody-grassy cup with natural sweetness and fruit notes. Low tannin content ensures a smooth, never-bitter brew that needs little or no sweetener. Like red rooibos, it is naturally caffeine-free and great plain or flavoured, hot or iced. First developed commercially in 1995 by South Africa's Agricultural Research Council, a genuinely recent innovation in a plant with a very long history.
