In India, the most common type of tea used in chai is “Mamri" tea. Also known as CTC tea, for the “crush, tear, curl” creation method. The tea is passed through rollers covered in sharp teeth to cut (and crush and tear) it down to pellets rather than leaves. This is particularly useful for those who want to make chai lattes, which typically use a ground tea concentrate rather than leaves. In India’s domestic market, CTC tea makes up 80% of tea production. In this blend however, we went with a lighter green.
