Formosa Bai Hao (白毫烏龍 - "white hair oolong") is known by many names: Oriental Beauty, White Tip Oolong, Champagne Oolong, Fancy Formosa Silver Tip. The names multiply because the tea earns them. This heavily-oxidised Taiwanese oolong - approximately 80% oxidation, making it the darkest and most fully oxidised oolong in the Adagio collection - is one of the most prized oolongs in the world, and one of the most fascinating to understand.

The extraordinary sweetness and fruity complexity are not the result of careful blending or flavouring. They are caused by the bite of the green leafhopper insect (Jacobiasca formosana) - the same insect that produces Darjeeling's famous muscatel character. The plant's stress response to the leafhopper bite produces the natural honey, peach-pit, and stone fruit compounds that define Bai Hao's character. No insects, no flavour. This is the tea that bugs literally make better.

You certainly can, but you definitely don't have to.

I personally don't. Just Steep at a steaming 185 then steep for 3 minutes

When the directions say 2 heaping teaspoons per cup, what size mug does that assume? I pour ~16 oz of water on the leaves per steeping.
