Apple and caramel are a classic pair and for good reason--both share the aromatic compounds vanillin and furaneol, which impart sweet vanilla and burnt honey note to both. Assam tea shares maltol with caramel, giving both a malty taste. It also shares toulene with apples, which is responsible for the phenolic (medicinal, smoky, chemical - mostly used to describe beer and wine) notes in both. Lastly, lavender enhances the floral geranyl acetate hints found in apple.
