When raw cacao beans are roasted it undergoes the Maillard reaction. Thus it pairs well with other roasted flavors, such as caramel (roasted sugar) and hojicha (roasted bancha, or the second flush of sencha). The roasting process causes cocoa to develop over 600 different aromatic compounds. Interestingly, it shares at least 3 with passionfruit: linalool, 2-acetylfuran, and furaneol, all of which lend to slightly acidic, fruity, and smoky caramel notes in both. The umami notes in the hojicha balance the bitterness of the chocolate, and sweetness from vanilla and the fruits complement it.
