However tempting it is to consider scotch as an ingredient in butterscotch, "scotch" is a variation of scorched, which is what happens when heating brown sugar to a very high temperature. The molasses in brown sugar provides butterscotch with more complex flavor than caramels which use white granulated sugar. Creamy sweet butter creates the smooth texture. (What's not to like about butter, right?) Other ingredients are vanilla, heavy cream, and salt. English confectioner, Samuel Parkinson, was the first to make a hard candy of these ingredients in 1817 and earned himself the royal seal of approval.
