Ancient Greeks and Romans preserved chestnuts in honey and modern Japanese candy them to serve with mashed sweet potatoes they call kuri kinton (chestnut gold mash) and serve to wish everyone a "golden" new year. You'll find the street snack, kestane, its texture is similar to baked potatoes albeit with a delicate nutty flavor, in Istanbul. The holidays in Philadelphia, Boston, and Manhattan mean vendors selling just-roasted chestnuts in small bags that warm the hands against the wintry night and satisfy the palate. And the nuts are still ground into a wholesome flour for bread.
