Kukicha (茎茶, literally "stem tea") is a warm, rounded, and playful green tea from Japan — and unlike any other tea in the Adagio Japanese collection. Where Sencha, Gyokuro, and Genmai Cha are made from tea leaves, Kukicha is a blend of tea leaves and tea leaf stems. The stems are the part of the tea plant almost every other tea discards. In Kukicha, they are the defining ingredient.
The lightness of the stems translates directly into the cup: a sweet note of white sesame seed or chestnut that sits alongside the green tea character, giving Kukicha a flavour profile found nowhere else in Japanese tea. Tender quality to the texture, like soft white rice. Very balanced and, for a Japanese tea, very low in astringency — and naturally lower in caffeine than leaf-only teas, because the stems contain significantly less caffeine than the leaves.
TEA TYPE
Green Tea
CAFFEINE
Moderate
Green tea usually offers a gentler lift than black tea or coffee, with enough caffeine for a light, refreshing boost.
STEEP
180° for 2-3 mins
Use the shorter steep for a smoother cup; over-steeping may taste bitter.
In most regions of the world, tea is made by steeping dried tea leaves in hot water, with variations coming from leaf type, water temperature, and steeping time. In Japan however, they decided to get a little more creative. For example, Japanese tea leaves are usually steamed instead of pan-fired to stop oxidization. Matcha is ground into powder before serving, and Hojicha leaves are roasted. Kukicha goes another direction entirely by including the stems as well as the leaves. This is where it gets its name of "stem tea", though it can also be called Bocha, or "rod tea".
