I picked Vanilla Oolong as my base tea to add a very deep vanilla flavor, and it mimics the caramlized sugar crust on top. The Cream tea is what adds the creaminess that you would get from the custard. I picked a vanilla tea to just add to the smooth vanilla flavor. And I finally added raspberry pieces to just add a slight raspberry taste as if you would have added a few on top and a garnish.
