I keep experimenting with Adagio teas, often to pleasant surprises, but for me nothing else matches the subtle sweetness of white peony, a relative bargain among the white teas. I often let it steep a little longer than recommended until the brewer reaches a darker green. The lightness of the white tea makes it difficult to oversteep.

This is a great, delicate tea. I love to serve it in my clear tea glasses I purchased from Adagio. One of my reasons for buying this tea was that I was intrigued by the review from Wang Hong, the White Peony farmer. She said they normally drink their White Peony old because of the sweet taste it acquires. She recommends storing in for a year, then drinking it and see what we think for ourselves. Alas, I don't think my White Peony will be around that long. I should have purchased two 6 oz. bags!

If you like white tea than you will like this tea. I has a nice aroma and I love to drink it together with honey (not putting honey in the tea but instead eating honey and sipping tea) However, I would recommend to let this tea steep twice as much time as it is recommended on the package. The package recommends 3-5 min but I steep it 5-10min because it's a light tea and it needs some time to infuse the water with color and taste. But don't worry even after 10 minutes of steeping the tea is still nowhere as dark as black tea.

This tea has a nice white tea flavor, but unfortunately it also has a heavy dose of rotting leaf pile in there, particularly in the smell. It's tough to enjoy the tea itself when the process of making the tea makes your house smell like earthworms and mildew, not to mention that you won't be super popular with your roommates.
