A recreation of the flavors of Thai iced tea, with a nice strong Ceylon brew. The vanilla, cinnamon and cardamom familiar to Thai iced tea are here, with just a dash of almond. Ceylon all around. Brew it strong. Add sugar and lots of cream or even condensed milk (like they do in restaurants), for a decadent and refreshing treat.
I LOVE Thai iced tea, but I have a hard time finding any blends to brew at home that don't contain artificial color and do use traditional Ceylon. To the rescue: Adagio quality Ceylon blends! If you'd like to create the bright orange color of a classic Thai iced tea, try adding some of your favorite food coloring! Or leave that to the experts at your favorite restaurant and enjoy a cup at home with this spice blend inspired by the original. Suggestion: Not everyone likes star anise, but it's lovely in a Thai iced tea, so if you have some in your cabinet and desire the addition, toss 1/2 of a star into your brew per cup. Remember to brew this tea STRONG before adding sugar, tossing over ice, and pouring in cream or condensed milk to your heart's content.
