I used to grow each of these when I lived on a farm in Walpole, New Hamshire, and all three went into a tea I called grass lover's tea. The name changed a little, but this tea is a simple herbal mix, lacking the usual hibiscus and other stronger flavors Americans usually prefer in their tea. One problem with the tea is that it can put you to sleep, the chamomile seems to help you off to bed even if you plan to stay up late reading.
