Where I would describe peppermint as having a vibrant taste and being cold like a winter breeze, I would say spearmint is subtle and cool. It's still a minty flavor but it's not as pronounced as peppermint tea. Instead of being a minty punch in the face it's a smooth cool taste. A good option if you want mint but don't like the pronounced flavor of peppermint

I've always enjoyed peppermint tea, but it turns out that I LOVE spearmint tea. The mint flavor is slightly different -- sweeter, more herbal -- and the mouthfeel is less astringent and cooling than peppermint, which may not be to everyone's taste, but I think it's fantastic.
