Growing up, we didn't have very many Christmas traditions, but one thing that I could always count on was a big box of rainbow cookies mixed in with the desserts on the holiday table. Oh, delicious memories! For those who have never tasted these heavenly rectangles, they consist of 3 layers of colored almond cake (pink, green, and yellow) with raspberry jam between each layer and covered in chocolate all around.
This is the black tea version. I also have a decaffeinated blend available, which uses herbal teas/rooibos. Enjoy! :-)
