Growing up, we didn't have very many Christmas traditions, but one thing that I could always count on was a big box of rainbow cookies mixed in with the desserts on the holiday table. Oh, delicious memories! For those who have never tasted these heavenly rectangles, they consist of 3 layers of colored almond cake (pink, green, and yellow) with raspberry jam between each layer and covered in chocolate all around.
This is the decaf version, which uses only herbal teas. I also have a caffeinated blend available, which used flavored black teas. Enjoy! :-)
