Extremely sweet lemon spread combined with rich, buttery cream are the traditional and favored condiments of choice for scones, biscuits, and anything else you can conceivably add them to. Use your fingers to scoop out the remains when your waiter isn't looking.
Simply Perfect Lemon Tea Cookies:
1 cup butter (two sticks) softened,
1 cup sugar,
2 eggs,
1 tablespoon vanilla extract,
1/2 tablespoon almond extract,
1 tablespoon lemon curd,
2 cups flour,
A pinch of salt.
Using a mixer, cream together butter and sugar until well blended. Add eggs, extracts, and lemon curd until mixture is smooth. Gradually add flour and salt while continuing to mix dough until light and fluffy.
Cover a cookie sheet with parchment paper. Using a piping bag, pipe the cookie dough out onto the cookie sheet, making each about the size of a quarter. You may also make 'drop' cookies by spooning the dough onto the pan.
Bake at 350 degrees Fahrenheit for 8-10 minutes or until just slightly browned.
