We have searched high and low to find the perfect pairing for our black and oolong teas. Though known specifically as Orange Blossom, this variety of honey is produced using a range of citrus nectar including grapefruit, lemons, limes and, of course, oranges. Known for its recognizable aroma, Orange Blossom honey is dense and richly sweet. It has a light amber color which is known to darken over time. Its citrusy flavor makes it a wonderful companion to our black and oolong teas.

Define 'crystallization' for me, please? My honey is an opaque blob, which I thought would go away as it warmed up to room temperature but it didn't and it also doesn't work well with the pump like the others. I'm stumped.

Hello Allyson! Real, raw honey crystallizes- it's a mark that the honey has not been overprocessed or heated. It crystallizes due to the high glucose in the honey.

Hello! I also had the issue that the honey arrived crystallized. While I'm aware that this is natural for honey, I can't use the pump with it the way it is. Is there a way to return the honey to its liquid state?

A good technique is to place your honey jar in a pan with a small amount of water in it, turn heat on low (don't burn/overheat it) and slowly turn the jar until it liquefies again. My mom also recommends opening the jar to stir it.

180°f water should do the trick...just leave it in the water until it reincorporates the crystals. Boiling water will pasteurize it and defeat the point of raw honey.

The nutrition facts label says that the honey has 16 g of sugar, but there is nothing about the added sugars. How many grams of added sugar, if any, is there?
