Recipe: Chicoriccino Chocolate Chip Cookies

Happy January, everyone! We hope that you had the loveliest of holidays, that you were able to spend time with those who you love and love you best, eat delicious foods and drink delicious drinks, and enjoy every moment of every second!

We had a great holiday season and we're so excited for 2023 and everything it has to offer! With that being mentioned, does anyone have any New Year's resolutions? Ours is to continue to provide the best of teas as well as our tips and fun recipes to you all! Well, we might have some other plans. But you'll just have to wait and see!

But even though December has passed, winter is here to stay. And although it means more cold weather for the majority of us, it doesn't mean that we have to stop getting cozy by the fire with our favorite drinks and snacks. It's important for us to remember to enjoy the little treats life has to offer during cold winter months. And guess what? We have a new cookie recipe to help give you your cozy little treat fix!

What's So Special About Chicoriccino Tea?

If you're asking what makes the Chicoriccino so delicious, you're in the right place. This blend of tea has the most beautiful intoxicating aroma of chicory based chocolate, cinnamon, and dandelion root that resembles the smell of coffee. With hints of nuttiness that tie this flavor profile perfectly, it brings the question as to why we've never made a recipe for it yet.

The Recipe



Equipment:

Small mixing bowl
Small pot
Tea strainer
Electric Mixer (or large mixing bowl and wooden spoon)
Baking Pan
Grinder (or mortar and pestle)

Ingredients

This recipe makes about 4-5 dozen cookies.

2 1/4 cups of flour
1 tsp baking soda
1 tsp salt
1 tsp vanilla
2 1/3 cups of butter
3/4 cups of sugar
1 cup of brown sugar
2 large eggs
2 1/4 cup of chocolate chips
4 tbsp of Chicoriccino

Directions

Preheat the oven to 375 F.

In a small pot, warm butter to 212 F, add 2 tbp of Chicoriccino and seep for 4 minutes.

Strain tea and refrigerate butter until soft.

Grind the remaining 2 tbp of Chicoriccino and in a small mixing bowl, mix together the tea, flour, baking soda, and salt; and set it aside.

In a mixer bowl, mix together the softened butter, vanilla, sugar, and brown sugar until creamy.

One at a time, add the eggs with time in between each to allow them to mix evenly.

Slowly add in the flour mixture and mix until smooth.

Finally, add in the chocolate chips, and other desired additionals, and mix.

With clean hands, roll the cookie dough into small balls about 1 inch tall and wide.

Place the cookie dough on a baking sheet leaving them 1.5-2 inches away from each other and the walls of the pan.

Bake each sheet for 10-12 minutes.

After baking each sheet, let it cool for 5 minutes before storing in an airtight container and date for 2 weeks.
