Springerlea are very special cookies that are rather a pain to make, however they taste lovely. They are fluffy and tender and rich with a Scandinavian palate of flavors.
My father made these when he was really in the mood. They take 2plus days to make as they need to air dry to preserve the impression pressed into them with the fancy rolling pin. Anyway, this week is the one year anniversary of his passing and I saw the aniseed and it made me think of the cookies and many a good cup of tea shared with him.
