The caramel, a crunchy sweet in 1000 B.C. Arabia, evolved into a chewy creamy candy in 17th century Europe and the U.S., where pioneer women slowly mixed sugar with boiling milk to form the sweet. Caramels are made by heating water to 240 degrees and adding sugar until it melts. A brown color results (called caramelization) that turns the mixture into a thick, sticky candy. To avoid burning, heavy cream (or corn syrup or coconut oil) is added which contributes to the luxurious texture. "Caramel" means the highest stage of heated sugar or the candy itself.

“ I had the rooibos caramel before! The rooibos caramel blend had little caramel chunks while this blend was just flavored black tea. The flavor is similar despite the missing caramel cubes, but a bit toastier and nuttier. Definitely a black tea! ”
