A bold, sweet apple pie blend with a drizzle of rich caramel. Simply Perfect Cinnamon Tea Cookies: 1 cup butter (two sticks) softened, 1 cup sugar, 1 tablespoon brown sugar, 2 eggs, 1 tablespoon vanilla extract, 1/2 tablespoon almond extract, 1 teaspoon cinnamon, 2 cups flour, A pinch of salt. Using a mixer, cream together butter and sugars until well blended. Add eggs, extracts, and cinnamon until mixture is smooth. Gradually add flour and salt while continuing to mix dough until light and fluffy. Cover a cookie sheet with parchment paper. Using a piping bag, pipe the cookie dough out onto the cookie sheet, making each about the size of a quarter. You may also make 'drop' cookies by spooning the dough onto the pan. Bake at 350 degrees Fahrenheit for 8-10 minutes or until just slightly browned.
